Thanksgiving Leftover Fritters

Thanksgiving is over, and now you've got a fridge full of leftovers. You might be asking yourself, "What am I supposed to do with all of this food? Boring turkey sandwiches, again???" I vote you change things up this year with my recipe for Thanksgiving Leftover Fritters! This is a really fun and creative way to use up the extras from your holiday feast. It also doesn't hurt that these are ridiculously delicious too!

Ingredients

Normally, I don't like my food to touch on my plate. Something about it doesn't sit well with me, HOWEVER...I totally make an exception for this recipe because it's amazing. It takes all of the best parts of your Thanksgiving dinner and smashes them into one delicious dish.

Leftover Thanksgiving Fritters

This isn't so much of a "set-in-stone" recipe as it is a rough guideline for how I like to use my leftovers. Feel free to experiment with other ingredients and different amounts, etc.! The most important thing to watch out for is to make sure that your mixture isn't too wet. It needs to be fairly dry in order to stay together when you fry them.

  • 1 Cup Leftover Turkey, Rough Chopped
  • 1 to 1 ½ Cups Mashed Potatoes
  • ½ Cup French Green Beans, Rough Chopped
  • ½ Cup Leftover Stuffing

Mix all of these ingredients together and then form them into ⅓-cup patties, then fry them undisturbed in a hot pan for several minutes per side until a nice crust forms and they are thoroughly warmed through. Finish everything off with some leftover gravy and fresh chopped parsley!

These aren't complete unless you serve them with some Orange Cranberry Sauce on the side, and that's a fact!

Equipment

  • Large Skillet
  • Large Mixing Bowl

Ingredients
  

Fritters

  • 2 - 3 Tablespoons Neutral Oil
  • 1 Cup Leftover Turkey Rough Chopped
  • 1 to 1 ½ Cups Mashed Potatoes Begin with 1 cup, then add more if needed.
  • ½ Cup French Green Beans Rough Chopped
  • ½ Cup Leftover Stuffing

Garnishes

  • Gravy
  • Parsley Finely Minced

Instructions
 

  • Heat a large skillet over medium-high heat.
  • While pan is heating, add chopped turkey, mashed potatoes, green beans, and stuffing to a large mixing bowl. Thoroughly mix until combined. Portion the mixture into ⅓-cup fritters.
  • Add oil to the pan and add 4 fritters. Cook undisturbed for 4 to 5 minutes until crusty and golden brown. Carefully flip and cook for an additional 4 to 5 minutes. Repeat with the remaining fritters.
  • Serve warm with gravy, cranberry sauce, and minced parsley for garnish.

    This is genius! Such a great way to use up Thanksgiving leftovers. Had to throw on a pot of greenbeans but that was the hardest part!
