This Coffee Cake Crumble has the perfect combination of textures: soft, fluffy cake contrasts with the delicate crunch of the cinnamon crumble topping. Everything is topped off with a drizzle of my delicious vanilla icing.
This recipe took several tries to get just right. Some versions wound up too flat, some were too wet and sticky, but mostly they all had an overall “off” quality to them. However, this iteration is perfect. Admittedly, you don’t hear too many complaints about having an abundance of cake in the house, but developing this recipe did come with a level of frustration. I hope you enjoy this cake as much as we do – it really is perfect!
Components and Ingredients
There are three elements to this cake: the cake, the cinnamon crumble topping, and the vanilla icing.
The Cake
The cake is comprised of all-purpose flour, granulated sugar, brown sugar, unsalted butter, sour cream, eggs, vanilla, baking powder, baking soda, and salt. The mixing process is below:
- Cream the butter and sugars together for several minutes in a mixing bowl.
- Add the eggs one at a time until incorporated.
- Add the vanilla extract, and mix to combine.
- Combine the flour, baking powder, baking soda, and salt in a separate bowl.
- Add half of the flour mixture to the wet ingredients, and incorporate.
- Add half of the sour cream and stir to combine.
- Repeat with the remaining flour and sour cream. Stir until just incorporated, taking care not to overmix.
- Pour the batter into a buttered 7×11-inch (2-quart) casserole dish, or a 9×9-inch pan.
Crumble Topping:
The crumble topping uses unsalted butter, light brown sugar, flour, cinnamon, and a touch of fine sea salt for balance.
- Mix all ingredients in a medium sized bowl.
- Use a fork or your fingers to cut the butter into the ingredients until varying sized lumps form.
- Spread evenly over the top of the batter in the prepared baking dish.
Vanilla Icing:
This quick and easy vanilla icing has powdered sugar, heavy cream, vanilla extract, and pinch of fine sea salt. It’s as simple as mixing together in a bowl, and drizzling over the cooled cake.
- Combine all ingredients into a small bowl, stirring until smooth.
- Spoon over cooled cake, or optionally, use a squeeze bottle to drizzle it over the top.

- Stand Mixer
- 7×11-inch Casserole Dish, 2-Quart or 9×9-inch Square Pan
Ingredients
Cake
- ½ Cup Unsalted Butter 113g, Softened
- 1 Cup Granulated Sugar 200g
- ¼ Cup Light Brown Sugar 50g, Packed
- 2 Large Eggs
- 2 Cups All Purpose Flour 240g
- 1 ½ teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Fine Sea Salt
- 1 Cup Full Fat Sour Cream 220g
- 1 teaspoon Vanilla Extract
Crumble Topping
- 6 tablespoon Light Brown Sugar 88g, Packed
- ½ Cup All Purpose Flour 60g
- 1 teaspoon Ground Cinnamon
- ¼ teaspoon Fine Sea Salt
- 4 tablespoon Unsalted Butter 45g, Cold
Vanilla Icing
- 1 Cup Powdered Sugar 113g
- ½ teaspoon Vanilla Extract
- 4 tablespoon Heavy Cream 60ml/2oz.
- 1 Small Pinch Fine Sea Salt
Instructions
Cake:
- Preheat oven to 350°F and generously butter a 7×11-inch dish or a 9×9-inch pan.
- Cream butter and sugars together until light and fluffy on medium-low speed.
- Add eggs one at a time until completely incorporated.
- Add the vanilla extract and mix until combined.
- In a separate bowl, mix flour, baking powder, baking soda and salt.
- Add half of the flour mixture to the stand mixer and combine on low speed.
- Add half of the sour cream, continuing to mix.
- Add the remaining flour and sour cream until just combined. Take care not to over mix.
- Pour batter into prepared baking dish or pan.
Crumble Topping:
- In a medium bowl, mix sugar, cinnamon, flour, butter and salt with a fork or your fingers until incorporated and varying sized clumps form.
- Pour mixture evenly over the cake batter.
Baking:
- Bake 30 to 35 minutes. Remove and let cool completely – 1 to 2 hours.
Icing:
- While the cake is baking, combine the powdered sugar, heavy cream, vanilla extract, and salt in a small bowl. Mix with a fork until completely combined. (If icing is too thick, add a splash of heavy cream or milk and combine to loosen.)
- Drizzle icing over cake.
Serving:
- Cut into 12 pieces and serve.
