This Sparkling Honey Pear and Ginger Cocktail is a perfectly refreshing drink all year round. The secret to this recipe is the super easy and delicious honey, pear, brown sugar and ginger syrup. A splash of fresh lemon juice and several ounces of Prosecco finish this cocktail off to create a light, crisp and inviting drink.
Honey Pear and Ginger Syrup
This recipe all starts with the homemade, honey, pear, ginger, and brown sugar syrup. It comes together in 15-minutes and can be used as a base for any number of cocktails. The addition of freshly grated ginger provides earthy spiciness that balances this cocktail perfectly.
Slice the pears, peel and grate the fresh ginger, and combine everything with water and a small pinch of kosher salt in a medium sized sauce pot. Simmer for approximately 15-minutes, remove from the heat, mash with a spoon or a potato masher, and strain with a fine mesh sieve. Add the honey and brown sugar, and stir to combine. Once this mixture cools, you are ready to add this to your cocktail. This recipe will yield enough syrup for 8 servings, which is enough for an entire of Prosecco.
Assembly
Assembling this cocktail is a very straight-forward process. Double the amounts if sharing with a friend or two. Any extra honey and pear syrup will store in the fridge for several weeks if you don't use it all.
- Fill a cocktail shaker with ice
- Add half an ounce of lemon juice
- Add one ounce of honey pear and ginger syrup
- Add three ounces of Prosecco
- Stir gently for approximately 30-seconds to 1-minute until chilled
- Strain into a cocktail glass, garnish with a pear slice, and serve
To serve as a punch for a crowd:
- Add four ounces of lemon juice to a large punch bowl or drink serving container

- 4 Pears Sliced and Rough Chopped
- 2 Tablespoons Fresh Ginger Grated (From roughly two 2-inch pieces of fresh ginger)
- 1 Cup Water (8 oz.)
- Pinch Kosher Salt
- 4 Tablespoons Light Brown Sugar (¼ Cup)
- 4 teaspoon Honey
One Serving
- ½ oz. Lemon Juice Fresh Squeezed
- 1 oz. Honey Ginger and Pear Syrup
- 3 oz. Prosecco
Punch Serving
- 4 oz. Lemon Juice Fresh Squeezed
- 8 oz. Honey Ginger and Pear Syrup
- 1 750 ml Botle Prosecco
Instructions
Homemade Honey Ginger and Pear Syrup
- Peel and grate two 2-inch pieces of fresh ginger
- Slice and rough chop pears, discarding the cores.
- Combine pears, ginger, water, and a small pinch of kosher salt in a medium sized sauce pot and bring to a boil. Reduce heat and simmer for 15-minutes, stirring occasionally.
- Remove from heat, and mash pears with a potato masher or wooden spoon.
- Using cheesecloth or a fine mesh sieve, strain syrup into a bowl.
- While still warm, add brown sugar and honey, stirring to combine.
- Let cool completely.
One Serving
- Fill a cocktail shaker with ice.
- Add ½ ounce of fresh lemon juice.
- Add 1 ounce of honey ginger and pear syrup.
- Add 3 ounces of Prosecco.
- Stir gently for 30-seconds to 1-minute until chilled.
- Strain into a tumbler, martini, or a coupe glass.
- Garnish with a pear slice and serve.
Punch Serving
- In a large punch bowl or drink server, add 4 ounces of fresh lemon juice and 8 ounces of honey ginger and pear syrup, stir to combine.
- Top with 1 bottle of Prosecco, stirring gently to combine.
- Ladle into 8 cocktail glasses topped with ice.
- Garnish with pear slices and serve.
