This recipe for Breakfast Strata with Sausage has been a total game changer for our family! It's quick and easy to throw together, feeds a crowd, and is delicious! Assemble it the night before, then put it in the oven the next morning, and you have breakfast for the whole family in about an hour! This is a perfect solution for busy weekdays, yet elegant enough to make for a special occasion (for instance, I make this every Christmas morning in our house)!

Breakfast Strata with Sausage

Ingredients

If there was one word to describe this recipe, it would be "simplicity." There are only seven ingredients, and it takes about 15 minutes to assemble. You will need to let it rest for several hours, up to overnight, before baking it, but it's easy enough to let it sit in the fridge overnight. I always assemble this dish the day before and rest it in the fridge overnight. This recipe uses the following ingredients:

I typically use standard white bread for this recipe. While not necessary, if you feel like making your own bread, you have to check out my recipe for the Perfect Homemade White Bread. It really is perfect and fantastic to use for this recipe! You can also use leftover French or Italian bread, baguettes, etc. As long as it's relatively soft, it should work perfectly fine.

Breakfast Strata with Sausage

One of the best parts of this recipe is that it's endlessly customizable, too! I like white cheddar the best in this, but feel free to have at it with the cheese combinations and other filling ingredients. Try some chopped and sautéed vegetables, or swap the sausage out for bacon, etc. You really can make this your own with very small tweaks!

Instructinos

The process of assembling this is easy and straightforward. That being said, there are several things to note:

Assembling the Strata
  1. Use a 9 x 13-inch casserole dish. If you use a smaller or taller dish, just note that you will likely need to increase the cooking time.
  2. Thoroughly mix the sausage, bread cubes, and cheese before adding the egg and milk mixture. This ensures that everything gets mixed properly and that every bite is uniform.
  3. Add the egg and milk mixture over the dry ingredients.
  4. Press the bread cubes down into the liquid ingredients before covering and storing in the fridge to ensure that there are no dry spots.
Pouring the egg mixture over the bread cubes, sausage, and cheese.

Serving Suggestions

After an overnight rest in the refrigerator, place the strata on the counter while the oven is preheating, then bake for 45 to 50 minutes. Remove it from the oven, let it cool for 10 to 15 minutes, and then serve.

There are a few options for how to serve this dish. I typically enjoy this by itself, but you can serve it with a side of salsa and sour cream to take it up a notch!

Reheating and Storing Suggestions

Storing

To store, simply cover the whole dish with plastic wrap or foil and refrigerate for up to a week.

Reheating

Reheating is as simple as warming up pieces of the strata in a 350°F oven for 8 to 10 minutes until warmed through. If you're reheating the whole dish, cover with tinfoil and extend the time to about 15 to 20 minutes until completely heated.

Equipment

  • Large Heavy Bottom Skillet
  • Medium Size Bowl or Large Measuring Cup
  • 9 by 13-inch Casserole Dish

Ingredients

  • ¾ Lb Breakfast Sausage
  • 6 Eggs Beaten
  • 1 ½ Cups Whole Milk
  • 4 Cups Cubed White Bread 8 Oz. by weight or approx. 6-7 slices of plain white bread
  • 2 Cups White Cheddar Shredded
  • 1 ¼ Teaspoon Ground Mustard
  • 1 Teaspoon Kosher Salt

Instructions

  • The day prior to serving, heat a heavy-bottom skillet over medium-high heat. Add the sausage and brown, about 8 to 10 minutes. Crumble the sausage into bite-sized pieces as it cooks.
  • While sausage is cooking, beat eggs, milk, ground mustard and kosher salt together in a medium sized bowl or large measuring cup.
  • Add bread cubes to a 9 by 13-inch casserole dish and top with browned sausage and shredded cheese. Mix to combine.
  • Pour the milk and egg mixture evenly over the dry ingredients. Press down on any of the bread cubes that are sticking up to ensure that they don't dry out.
  • Cover and refrigerate overnight. (This can be made the same day, just let it rest for an hour or two prior to baking).
  • Remove the strata from refrigerator and preheat the oven to 350°F.
  • Bake for 45 to 50 minutes until bubbly and brown. Remove and let cool for 10 to 15 minutes before serving.

I made this today for an Engagement Brunch and loved it! The only changes I made were I left off the mustard and replaced part of the milk with 1/2 c. of half and half. Oh yeah, I also thawed a bag of Trader Joe's red skilled homefries. This was a smash at the party. Thank you!

Hi Dianne! Glad to hear this turned out for you! The additions sound great. Unfortunately, I don't have a Trader Joes near me, but will have to try that one of these days!

Absolutely amazing! I’m allergic to dairy so I successfully substituted unsweetened almond milk, and vegan cheese and every person at the table loved it!
