The additional step of browning the butter before adding it to the batter lends a subtle, nutty, and toasty flavor that really takes these over the top. The batter can be made the night before, which really helps speed things up on those early mornings!
Brown Butter Waffles Ingredients
As mentioned above, this recipe uses unsalted butter that is browned before adding it to the batter. This adds a nice, toasty, nutty flavor that regular butter doesn’t have. You normally need to add melted butter to waffle batter anyway, so cooking it for a few extra minutes is all you have to do! The rest of the ingredients are what you would expect: flour, baking powder, baking soda, sugar, salt, and a few liquid ingredients like sour cream and buttermilk. One of the best parts about this recipe (other than how awesomely delicious these are!) is that you can make the batter the night before and store it in the fridge over night. The next morning, all you have to do is heat up your waffle iron and start cranking out waffles for you and your loved ones.
One note on the butter used for this recipe: I recommend that you use a high-quality, European-style butter, like Kerrygold or Plugra. These have a slightly higher butterfat content than most American butters. This style of butter will have a richer flavor and brown slightly better. More flavor = more better.

The most important piece of equipment for these waffles is, obviously, a waffle iron. You can spend as much as you want on one. I use this multi-waffle maker from Dash. It makes four 4-inch waffles at a time, is budget-friendly, and the overflow troughs on the side help keep things neat and tidy! (My kids even love eating the overflow “waffle sticks”.)
This waffle Iron from All Clad is definitely more expensive; however, it offers several browning levels, and the inserts are removable for easy cleaning!

You absolutely cannot go wrong with the classic butter and syrup toppings on these waffles. Another classic combination is Strawberries and Whipped Cream.

Brown Butter Waffles
Equipment
- Small Sauce Pan
- Large Mixing Bowl
- Medium Mixing Bowl
- Waffle Iron
Ingredients
- 6 tablespoon Unsalted Butter 85g
- 2 Cups All-Purpose Flour 240g
- 2 tablespoon Granulated Sugar 30g
- 1 ½ teaspoon Fine Sea Salt 7g
- 1 teaspoon Baking Powder 4g
- ½ teaspoon Baking Soda 3g
- 1 Cup Sour Cream 235g
- 1 Cup Buttermilk 250g – Substitute for 1 Cup Whole Milk and 1 tablespoon Lemon Juice – Stir and let thicken for several minutes
- 4 Large Eggs Beaten
Instructions
- Add butter to a small sauce pan and melt over medium heat. Continue cooking for 4 to 5-minutes, stirring frequently until the milk solids in the butter have browned. Take care not to burn the butter.
- In a large mixing bowl, combine the flour, sugar, salt, baking powder, and baking soda. Stir to combine thoroughly.
- In a separate medium sized mixing bowl, combine the beaten eggs, sour cream, buttermilk, and browned butter together.
- Fold wet ingredients into the dry, and allow to rest for at least 20-minutes, up to overnight.
- Heat your waffle iron, and add as much waffle batter that your maker calls for. Cook until browned, approximately 5 to 8-minutes.
- Serve with pats of butter and maple syrup, or strawberry compote and whipped cream.
