This Chorizo Cheese Dip is insanely good and perfect for your next party or gathering. The cheese is rich and velvety smooth, and the chorizo is a perfect spicy compliment to balance out this whole dish. This is a really quick and easy recipe that uses very simple ingredients and is sure to satisfy just about anybody. (Seriously, who can say “NO” to chorizo and cheese???)
Chorizo Cheese Dip Ingredients
The cheese portion of this recipe is loosely based off my Restaurant Style Cheese Dip. I wanted this version to be a little thinner, so the liquid ingredients have been increased by about 25 percent. This still only uses 5 ingredients: white American cheese, half and half, pickled jalapenos with some of their brine, kosher salt, and a pinch of white pepper. Melt everything together over medium-low heat, and stir until smooth.
The chorizo part of this recipe is very simple as well. Fresh Mexican chorizo is sautéed with onion, garlic, hot sauce, a splash of white wine vinegar, and a little bit of lime juice.
Serving Suggestions
Once both parts are cooked, take a portion of the chorizo and ladle it into a bowl. Cover with a generous portion of the cheese dip, and garnish with finely minced cilantro and thinly sliced green onion. Grab some chips and dig in!
There are several serving option for this dish that I recommend:
- Make individual side dishes by portioning the chorizo mix into several small bowls, topping with cheese dip, and garnishing.
- Serve it all in one dish by sautéing the chorizo in a small, 8-inch skillet, then adding all of the cheese dip over the top and garnish. This would be the perfect appetizer for a party.
Serve this as hot as possible, as the cheese has a tendency to set up as it cools. If it sets up too much, gently reheat on the stovetop over medium-low heat. To reheat leftovers out of the fridge, add a splash of half and half or milk and heat on the stovetop until smooth.

Chorizo Cheese Dip
Equipment
- Medium Pot
- Medium Sauce Pan or Cast Iron Skillet
Ingredients
Cheese Dip
- 1 lb. White American Cheese Cubed
- 1 ¼ Cup Half and Half
- 2-3 tablespoon Pickled Jalapenos with Brine/Packing Liquid Diced
- Kosher Salt To Taste
- Small Pinch White Pepper
Chorizo
- 1 to 2 tablespoon Neutral Oil
- 1 Yellow Onion Finely Diced
- ¾ Lb. Mexican Chorizo One 14 oz. Package – Casings Removed
- 2 teaspoon Cholula Hot Sauce
- 1 Tbs White Wine Vinegar
- Juice from ½ Lime
- Green Onion Thinly Sliced
- Cilantro Finely Minced
Instructions
- Cube the white American cheese and place in a medium sized pot.
- Add the half and half, pickled jalapenos and their liquid, a pinch of kosher salt and white pepper.
- Heat on medium-low for 8 to 10-minutes, stirring regularly to avoid scorching. Continue to stir until all of the ingredients are incorporated and smooth. Taste and adjust for salt and pepper as needed.
- To keep warm, lower heat to the lowest setting (low or simmer), stirring occasionally.
- While the cheese is melting, heat a medium sized pan or cast iron skillet over medium high heat.
- Add neutral oil and sauté the onion until translucent, approximately 5-minutes.
- Add the chorizo and sauté an additional 5 to 7-minutes, breaking into smaller chunks and stirring until cooked through.
- Add the hot sauce and white wine vinegar, stirring to combine. Cook an additional minute or two.
- Remove from heat, add lime juice, kosher salt and pepper to taste.
- If serving for a crowd, add the cheese dip directly to the sauce pan or skillet with the chorizo. Garnish with thinly sliced green onion and cilantro. Serve with Tortilla chips.
- If serving as a side dish, spoon several tablespoons of the chorizo into small dishes, reserving some chorizo to place on top. Top each dish with cheese dip and garnish with the reserved chorizo, thinly sliced green onion, and cilantro. Serve with tortilla chips.

I made this cheese dip for a Cinco de Mayo party at our house this year and it was outstanding. It all fit into my full-size cast iron skillet and was very easy to make. Because it takes a while for everything to melt and come together, it’s very easy to adjust the seasonings to your taste as it cooks.
