These cheesy skillet mashed potatoes are a quick and easy way to take your mashed potatoes to the next level. Whole garlic cloves are boiled and mashed directly with the potatoes and infuse the dish with an extra layer of flavor.
Top with gouda and parmesan cheese and broil until crispy, and you have a perfect side dish for almost any weeknight meal.
Ingredients
This recipe for Cheesy skillet mashed potatoes uses potatoes, milk, unsalted butter, garlic, parmesan, gouda, kosher salt, and a little bit of chopped chives for garnish.
Cooking Process
- Start by peeling and cubing several pounds of russet potatoes.
- Boil the potatoes in salted water with whole peeled garlic cloves for 15 to 20-minutes until tender.
- Strain the potatoes and garlic, and mash together with a potato masher.
- Add the melted butter, and top with whole milk in batches, continually stirring until smooth.
- Season to taste with salt and pepper and add potatoes to a 6 ½-inch skillet, or three of these Lodge 16 oz. oval servers.
- Top with grated gouda and parmesan cheeses and broil on high for 5 – 10 minutes until browned and bubbly. Top with finely minced chives.
Feel free to customize the cheese topping with any good melting cheese of your choice. Cheddar, Swiss, and Havarti would be good options. Combining two or more cheeses is the best for adding flavor and texture.

Cheesy Skillet Mashed Potatoes
Equipment
- 1 Large, Heavy Bottom Pot
- 1 Small Sauce Pan
- 1 Strainer or Sieve
Ingredients
- 4 – 6 Cups Water
- 5 – 6 Medium Russet Potatoes About 3 Lbs.
- 3 – 4 Garlic Cloves Peeled
- 3 – 4 tablespoon Unsalted Butter Melted
- ½ – ¾ Cups Whole Milk Use enough to make the potatoes smooth
- ¾ Cup Gouda Grated
- ½ Cup Parmesan Grated
- Kosher Salt and Fresh Cracked Black Pepper To Taste
- 1 – 2 tablespoon Chives Finely Minced
Instructions
- Bring 4 – 6 cups of water to a boil in a large pot. Add several large pinches of kosher salt.
- While water comes to a boil, peel and cube potatoes, and peel garlic cloves. Once the water boils, add potatoes and garlic and boil for approximately 15 – 20 minutes until fork tender.
- While potatoes are boiling, melt butter in small sauce pan over medium-low heat. Reduce heat to low to keep melted until potatoes are finished.
- Drain the potatoes and garlic and return to the pot.
- Mash potatoes and garlic together with a potato masher until smooth. Add melted butter, stirring to combine.
- Add milk in several batches, stirring continuously until your desired consistency is reached. You may not use all of the milk.
- Add kosher salt and pepper to taste.
- Scoop potatoes into a small skillet or cast iron oval servers, top with grated gouda and parmesan cheeses.
- Broil on high approx. 4-inches from burner for 5 – 10 Minutes until bubbly and brown.
- Top with minced chives.
