Instructions
Bring 4 - 6 cups of water to a boil in a large pot. Add several large pinches of kosher salt.
While water comes to a boil, peel and cube potatoes, and peel garlic cloves. Once the water boils, add potatoes and garlic and boil for approximately 15 - 20 minutes until fork tender.
While potatoes are boiling, melt butter in small sauce pan over medium-low heat. Reduce heat to low to keep melted until potatoes are finished.
Drain the potatoes and garlic and return to the pot.
Mash potatoes and garlic together with a potato masher until smooth. Add melted butter, stirring to combine.
Add milk in several batches, stirring continuously until your desired consistency is reached. You may not use all of the milk.
Add kosher salt and pepper to taste.
Scoop potatoes into a small skillet or cast iron oval servers, top with grated gouda and parmesan cheeses.
Broil on high approx. 4-inches from burner for 5 - 10 Minutes until bubbly and brown.
Top with minced chives.
Notes
As with most mashed potato recipes, the amount of butter and milk will vary slightly with the exact size of your potatoes. Add them in batches and combine to reach your desired consistency.
