In a small saucepan, add the water, sugar, and salt. Heat over medium-high heat, stirring frequently until boiling.
Remove from heat. Stir in the vanilla bean or vanilla extract and allow to cool completely.
Earl Grey Tea Concentrate
Combine boiling water, tea bags, and food-grade lavender. Cover and steep for 6 to 8 minutes.
Remove tea bags and lavender and allow to cool for about 20 to 30 minutes.
Vanilla Sweet Cream
In a small glass or bowl, combine the 4 tablespoons heavy cream, 1 ½ teaspoons whole milk, and 1 ½ tablespoons of vanilla simple syrup. Froth for 15 to 20 seconds until it begins to thicken slightly. Take care not to overmix, as that will make it too stiff.
Assembly
Add the ice to a 12-ounce glass. Pour the brewed and cooled tea over the ice.
Gently pour the vanilla sweet cream over the top and serve. Garnish with a small sprinkle of more lavender leaves if desired.
Notes
Can I Make this Latte Ahead of Time?
The simple answer is yes, you can totally make this Iced London Fog ahead of time! It's as simple as making the main components and storing them in the fridge until you're ready to use them. The vanilla syrup will keep in a sealed container in the fridge for up to 2 weeks. Make a big batch of the tea concentrate and store it up to 3 days in the fridge! Simply use the ingredients as needed! The only component that will need to be made fresh every time is the Vanilla Sweet Cream. The foam deteriorates fairly quickly, so this needs to be made every time.
Top Tip
Having patience while steeping the tea concentrate is crucial to extracting the flavors out of the Earl Grey. If you cut the steeping time short, the tea will become watered down when added to the ice.
