These Carolina Brussels Sprouts are a quick and easy way to elevate one of nature’s most contested vegetables. Some people turn and run for the hills when you mention the word “Brussels sprouts”. I promise you that these are delicious. If you are still not a fan after trying this recipe, then and only then, will you officially earn your title of “Official Brussels Sprout Hater”.
Roasting the bacon pieces in the same pan as the Brussels sprouts adds a ton of flavor and a bit of crunch. Crumbled goat cheese sprinkled over the top adds a bit of creaminess for balance. A drizzle of my Carolina White Barbecue Sauce to finish everything off gives you an amazing side dish.
Ingredients
The ingredients are very straight-forward: Brussels sprouts, bacon, neutral oil, salt, pepper, and freshly crumbled goat cheese.
Start by removing the bottom of your sprouts, then cutting them in half. Hang onto the leaves that come off, those crisp up fantastically in the oven. Slice your bacon into ½-inch wide strips, then give everything a good toss in any neutral oil of your choosing. Generously season with salt and pepper.
Roast at 425°F for 20-minutes, flipping once or twice to ensure everything browns evenly. You want to have a decent amount of color on the sprouts, but you also don’t want them burned. This can happen fairly quickly at this high temperature. Keep your eye on them towards the end and pull them out when they are done to your liking.
Crumble some goat cheese over the top, and finish them off with a drizzle of my Carolina White Barbecue Sauce. The sauce really brings all of the elements together and is super delicious.
Carolina White Barbecue Sauce Ingredients
Carolina White Barbecue Sauce consists of mayo, apple cider vinegar, yellow mustard, Dijon mustard, hot sauce, brown sugar, onion powder, garlic powder, paprika, cayenne, salt and pepper.
My Carolina White Barbecue Sauce is similar to an Alabama White Barbeque Sauce, but not really. It’s mayonnaise based, but it doesn’t have any brown mustard, horseradish, or any discernible heat level like a traditional Alabama White sauce has. I wasn’t sure exactly what to call it, but the name has since stuck—you’re welcome, world!
A quick drizzle of this sauce using one of these squeeze bottles from Oxo is the perfect way to finish this dish.

Equipment
- 1 Large Mixing Bowl
- 1 Baking Sheet

Brussels Sprouts
- 1 lb. Brussels Sprouts Bottoms Removed and Halved
- 3 Slices Bacon Cut into ½-inch strips
- 3 to 4 tablespoon Neutral Oil
- Several Pinches Kosher Salt To Taste
- Several Pinches Cracked Black Pepper To Taste
- Goat Cheese Crumbled
Carolina White Sauce
- ½ Cup Mayonnaise
- 1 tablespoon Cider Vinegar
- 1 teaspoon Yellow Mustard
- 1 teaspoon Dijon Mustard
- ¼ teaspoon Hot Sauce Texas Pete
- ¼ teaspoon Worcestershire
- 2 teaspoon Light Brown Sugar
- ¼ teaspoon Onion Powder
- ¼ teaspoon Garlic Powder
- ¼ teaspoon Paprika
- ¼ teaspoon Black Pepper
- ¼ teaspoon Kosher Salt
- Pinch Cayenne
Instructions
Brussels Sprouts
- Preheat oven to 425°F with rack in the middle position.
- Remove the bottoms and cut the Brussels sprouts in half. Don't discard the individual leaves that come off – these get super crispy in the oven. Add to a large mixing bowl.
- Slice bacon into ½-inch pieces. Add to sprouts and mix to combine.
- Add several tablespoons of neutral oil, several pinches of kosher salt and cracked black pepper to taste. Toss to evenly coat the sprouts and bacon. Transfer to a baking sheet.
- Roast for 20 to 30-minutes, flipping one or two times during cooking to brown evenly. Remove from oven and taste for additional seasoning.
- Crumble goat cheese and sprinkle over the top.
- Drizzle with Carolina White Sauce after plating and serve.
Carolina White Sauce
- Mix all ingredients in a small bowl. Allow to sit 5 – 10 minutes for sugar to dissolve, then stir again.
- Drizzle over Brussels sprouts with a spoon or a squeeze bottle.
